¾ cup Bobs Redmill Biscuit & Baking Flour Mix (or mix brown rice flour with garbanzo bean flour and a teaspoon of xanthan gum)
¼ cup sorghum flour ¼ cup almond flour ¼ cup raw sugar 2 tsp. pure vanilla ¼ cup olive oil 2 eggs (if you are vegan, add 2 tbsp. olive oil instead) 1 Tsp. GF baking powder Dash of cinnamon (helps regulate blood sugar levels) ~Mix all the ingredients together, place in a mini-muffin pan or a flat tray and roll into 12–16 little balls. On top of each one place: Dark Chocolate covered almonds(optional) on top of each cookie Bake at 350 F. for 25-30 minutes—until lightly browned. Comments are closed.
